Rice Crispy Smash Treats
What’s better than a rice krispy treat? A homemade, healthy, chocolatey treat of course!
Ingredients for Recipe:
3 ½ cups Rice Krispies
½ cup raw pecans – chopped
½ cup Pecan Smash
1/3 cup maple syrup
Ingredients for Topping:
½ cup dark chocolate chips (70% or higher)
¼ cup Pecan Smash
Sea salt (optional)
Line an 8 x 8 baking dish with parchment paper.
Add rice krispies cereal and chopped pecans to a large mixing bowl. Set aside.
In a small saucepan, heat Pecan Smash and maple syrup; whisk until combined. Heat over medium low heat until it slowly bubbles and thickens, stirring occasionally.
Remove from heat and pour over rice krispies mixture. Fold together until rice cereal is well coated.
Scoop rice mixture into baking dish. Use a spatula to pack it all in tightly and even out the top.
Place in the freezer to harden for 25 mins.
To make topping:
Place the chocolate chips in a double boiler (a heat-safe bowl over a saucepan with 2 inches of water) over medium low heat.
Stir mixture until chocolate chips are melted. Then, add in the Pecan Smash and stir well to mix together.
Remove the treats from the freezer and pour the chocolate mixture all over them, spreading evenly in a thin layer.
Sprinkle with sea salt if desired.
Pop back in fridge for another 15 mins or so to harden.
Remove and cut into 3 x 3 inch squares.
