Flourless Sweet Potato Muffins



- 1 cup mashed cooked sweet potato
- 1 large ripe banana
- 2/3 cup Pecan Smash
- 1/4 cup Maple Syrup
- 1/2 tsp ground ginger
- 1/2 tsp allspice
- 2 tsp baking powder

Put everything in a food processor and blend for 30 seconds. Remove lid, scrape sides of bowl and blend again for another 10 seconds until combined.

Pour batter into lined muffin tins filling 3/4 way full.

Bake 350°F for 20 mins or until when pierced with a toothpick it comes out clean.

NOTE: Muffins will be moist and delicate unlike flour baked recipes....but these are way better.
